Paleo banana coconut muffins

Dad has a plantation of lady finger bananas.

So we thought, ‘we’re ladies’, and that’s where it began.

Father produced his scythe and took a wieldy swing at a sexy bunch we’d eyed off.  It came down with the grace of a thousand falling bananas, because that’s what they were.

We then had the circumstance of a giant wad of bananas ripening, as they hang on twine beneath the stairs.

We also had the circumstance of my big sister’s baby shower approaching, with many of the attendees being super aligned with health, like us.

You can imagine Emily’s brain.

Ticking ticking ticking ticking…and then one coincidental internet flirt with The Wholefood Diary’s Paleo Banana Bread Breakfast Muffins….the firepeople hit the pole.

Em whipped out her apron and set about adjusting the entire recipe to be what she terms ‘Carly friendly’.  Oh it was very friendly.  Friendly to my face, over and over, and then friendly to all faces of the baby shower attendees.

What a delicious and healthy snack! Find those party patty paper thingos you have stashed in your ‘one-day-a-picnic kitchen drawer’ and give yourself a treat.

omg can there ever be too much coconut???? no.

  • handful chopped walnuts – activated is the preference.
  • handful chopped dates (optional – I do not enjoy these personally.  It’s sweet enough without them)
  • 1 teaspoon cinnamon powder
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla powder


  1. Beat all wet ingredients together until they are PULP, then stir through the dry to save the day.
  2. Spoon into pretty pitty patty cases and bake in an EXTREME oven on 180 degrees for 20 mins.
  3. Poke with knife.

Do the hokey pokey and turn around.
